Banana Delight Cake Recipe

This banana delight cake recipe was originally published in the WPTF “Ask Your Neighbor” Cookbook.

Ingredients
- 2 1/2 cups sifted cake flour
 - 1 2/3 cups sugar
 - 1 1/4 tsp baking powder
 - 1 1/4 tsp baking soda
 - 1 tsp salt
 - 1 tsp ground cinnamon
 - 2/3 cup vegetable shortening
 - 2/3 cup buttermilk
 - 1 1/4 cups mashed ripe bananas
 - 2 eggs
 


Directions
- Preheat your oven to 350°F (175°C). Grease and flour either two 9-inch or three 8-inch round cake pans.
 - In a large mixing bowl, sift together the cake flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
 - Add the vegetable shortening, buttermilk, and mashed bananas to the dry ingredients. Mix until all the dry ingredients are moistened.
 - Beat the mixture at low speed for 2 minutes using an electric mixer. Then, add the eggs and continue beating for 1 minute until well combined.
 - Pour the batter evenly into the prepared cake pans.
 - Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
 - Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and transfer them to wire racks to cool completely.
 - Once cooled, frost the cakes with your choice of frosting.
 
Would pair well with Buttermilk Icing.
